The lazy days of summer can lend themselves to a lot of ordering in. It’s always healthier to cook your own food but sometimes the heat (i.e. the laziness) can get in the way. I’ve thought of a happy medium to solve this issue-–make breakfast and lunch at the same time!
These savory Paleo pancake recipes are the perfect solution. Make them for breakfast (or brunch) and set aside some mix for an easy lunch or afternoon snack! These are all of the savory variety as well so you can easily avoid any sweet-overload guilt.

Ingredients: oil/fat of choice, almond flour, tapioca flour, coconut milk, salt, Kashmiri chili powder, turmeric powder, ground black pepper, red onion, cilantro leaves, serrano pepper, ginger.

This carrot scallion pancake recipe is pretty simple, requiring only six ingredients, including coconut flour to provide some consistency.
Ingredients: shredded carrots, scallion, eggs, sea salt, coconut flour, olive oil or coconut oil.
