The subtitle to this book says it all: “75 recipes made without eggs, gluten, soy, or refined sugar.” Sounds perfect!
You might already know Kelly’s delicious recipes as she’s the blogger behind TheSpunkyCoconut.com (which she’s been writing at since 2008).
Who This Book is For:
If you’re looking for a cold Paleo treat, then this book is definitely what you need. Not only are there ice cream recipes (including classic flavors like rocky road, mint chocolate swirl, and bing cherry and also non-traditional flavors like ginger kombucha tea and honeysuckle), but there are also ice cream sandwiches, frozen yogurts, ice pops, sherbets, and sorbets!
The Yogurt, Pops, and Sherbet chapter is my favorite. I know this may be an odd choice in a book full of ice cream recipes, but I was fascinated to learn how to make dairy-free frozen yogurt (you can use various nut milks or coconut milk with sugar dissolved in them and then add the inside of probiotic capsules to start the fermentation process).
I also loved just how beautiful the ice pops were! The rainbow pops have 5 gorgeous, bright layers, and the watermelon fruit pops are so pretty I would probably just stare at them rather than eat them!

1. Matcha Ice Cream
I was really sad not to get to try green tea ice cream during my last trip to Japan since they obviously didn’t have any dairy-free ones, but now I have the perfect recipe to recreate that delicious taste.
2. Chocolate Ice Cream
It’s simple, but chocolate is my favorite flavor!
3. Brownie Batter Ice Cream
Ok, I know it’s basically another chocolate ice cream, but really, what could be better?
