I was planning on grilling some burgers for dinner and was thinking about making more of the guacamole to go with them when I saw some great Ataulfo mangos at Costco, which were very ripe and sweet. The plan for mango salsa quickly formed in my mind…

I typically cut the mango gently into quarters (of course the stone in the middle prevents the mango actually forming 4 quarters). The skin on each quarter then peels off very easily. There are other options for cutting the mango (like slicing two large almost -halves off and then criss-crossing the mango flesh with a knife).I diced up 2 mangos….
And then 1 yellow pepper…
And then 2 small tomatoes.
Lastly, dice 2 jalapenos (you can omit if you dislike spice, but I really enjoyed the spicy kick combined with the sweetness of the mangos), chop up 1/4 cup of cilantro, and mince 4 cloves of garlic.
Mix the mangos and the vegetables together with 1 tablespoon of lemon juice and 2 tablespoons of lime juice and 1 teaspoon of salt.
It was delicious with the grilled burgers!
