Easy Pressure Cooker Shredded Chicken Taco Meat Recipe [Paleo, Keto]
This super easy pressure cooker shredded chicken recipe will make your dinner preparations a breeze! All you’ve got to do is throw the ingredients into the pressure cooker pot and press cook!
If you don’t have a pressure cooker yet, then I highly recommend getting one (like this Instant Pot I have) as it’ll make creating tender meats really easy (and fast). While I still love my slow cooker, I have to admit that the pressure cooker saves me a ton of time because it’s so much faster. It means that if I forget to put things into the slow cooker earlier, I can be saved by my pressure cooker.
Give this recipe a try and you’ll see just how easy using your pressure cooker to make dinner can be!
Place all the ingredients into the pressure cooker pot and mix the ingredients together well. While it’s good to slice up the vegetables, there’s no need to cut up the chicken breast – if you have time, you can slice it, but it’s not necessary as you’ll shred the meat after it’s cooked.
Set pressure cooker to cook on high pressure for 25 minutes. When it’s done, just follow your pressure cooker’s instructions on releasing pressure from the cooker. It does take a bit of extra time for your pressure cooker to get up to the right pressure and then to release that pressure. So add around 15 minutes to the cook time for that.
Shred the chicken breast meat and add extra seasoning if you want (taste it to check).
Serve with lettuce or kale leaves or by itself with topped with some super easy guacamole (recipe here).
