Raspberry Arugula Salad Recipe [Paleo, Keto, AIP]
I love the colors in this salad – in fact, that’s what I was thinking about when I was creating this salad. I wanted all the ingredients to be green except for the raspberries – so I added in green olives, cucumbers, as well as salad greens like arugula and spinach leaves. Then I topped it with whole raspberries so that their color would pop out of the salad.
This simple salad makes for a great side salad to your meal and it’s perfect for so many diets – it’s low in carbs (ketogenic) and doesn’t contain any dairy, nuts, seeds, or nightshades, so it’s Paleo and AIP-friendly (Paleo autoimmune protocol).
If you can’t find raspberries, you can use any other berry instead (e.g., sliced strawberries or blueberries). Also, if you can’t find arugula, you can use any type of salad greens you can find. Hope you enjoy this simple salad recipe!
Ingredients in Raspberry Arugula Salad Recipe
I started with some arugula leaves:
Then I added some chopped cucumbers – I cut them into slices and then chopped them into quarters so that they would be of a similar size to the olives and raspberries.
Then I added some spinach to the mix (you can skip this and just use your salad greens of choice).
Then I topped the salad with some olives.
For extra flavor, I added a few cilantro leaves (I used whole leaves without the stem). Parsley also works well for this.
Add in sea salt and olive oil and a bit of lemon juice or vinegar.
Mix everything together and then top with the whole raspberries.
This makes a great side salad for your meal. I served it with some zucchini beef saute.

- 2 oz (57 g) arugula
- 1 oz (28 g) baby spinach
- 1 cucumber, chopped
- 10-15 parsley or cilantro leaves (remove the stem)
- 14 pitted olives
- Salt to taste
- 1 Tablespoon (15 ml) olive oil
- 1 Tablespoon (15 ml) lemon juice
- 14 raspberries
- Place all the ingredients into a salad bowl (excluding the raspberries) and toss well. Add salt to taste. Top with raspberries but don’t mix in as they get crushed easily.
