Breakfast: I had 2 bowls of bone broth mixed with chicken broth (both had been simmering in different slow cookers) (recipes here and here) followed by a cup of black coffee. Jeremy had a bowl of chili (leftovers) (recipe here).
Lunch: I made Thai chicken and cauliflower “rice” (recipe coming) using the leftover chicken meat from making the chicken broth. We also had more bone broth mixed with the chicken broth.
Afternoon snack: I had 2 small potatoes (for why potatoes are paleo, read this article) with a bit of ghee.
Dinner: Beef curry (made with beef boneless short ribs that had been braised in the oven a few days ago, eggplants, zucchini, tomatoes, coconut milk, ginger, basil, cilantro, and spices) (it was a modified version of this recipe here). I also made a quick side dish of asparagus sauteed with bacon and lemon juice (recipe coming). We finished off the leftovers of the Brussels sprouts and sweet potato dish from yesterday as well and had a small potato each.
After dinner: We relaxed and had a small glass of Chardonnay and 2 pieces of 70% dark chocolate. Here’s an article on how to drink alcohol on a Paleo diet.
