- Saute the diced chicken breast in coconut oil until cooked.
- Wait for the chicken to cool then add it to the halved grapes, diced apple, and diced celery in a large bowl. Add in the coconut milk and salt to taste.
- Toss well.
I’ve always loved chicken salad recipes – you can make a large batch and store them easily in the fridge. And they’re great as a quick snack, a side dish, or even an entire meal if you’re hungry!

Add in the grape halves and diced apple.
Add the diced celery.
Place everything into a salad bowl and add the lemon juice.
Add in the coconut milk.
Mix well and add salt to taste.
