  • 5 medium apples (such as a mix of Gala, Pink Lady, and Granny Smith), peeled, cored, and chopped
  • 2 cups fresh or frozen cranberries
  • 6 TBSP tapioca flour, divided use
  • 6 TBSP maple syrup, divided use
  • 2 TBSP fresh lemon juice
  • 1-1/2 tsp ground cinnamon, divided use
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 cup unsweetened coconut flakes
  • 2 TBSP coconut flour
  • 1/4 tsp sea salt
  • 2 TBSP coconut oil
  • Pumpkin Pecan Ice Cream, for serving (optional
