Makes 12


For the crust:

  • 2 cups unsweetened coconut flakes
  • 1/2 cup (packed) pitted Medjool dates
  • 2 TBSP honey
  • 1 tsp vanilla extract

For the filling:

  • 2 medium ripe avocados, pitted
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 TBSP fresh lime juice
  • 2 tsp finely grated lime zest
  • 1/2 cup unsweetened coconut flakes, for sprinkling


  1. Line 12 cups of a standard muffin pan with paper liners.
