From the December/January 2018 issue
For the crust:
- 2 cups unsweetened coconut flakes
- 1/2 cup (packed) pitted Medjool dates
- 2 TBSP honey
- 1 tsp vanilla extract
For the filling:
- 2 medium ripe avocados, pitted
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 2 TBSP fresh lime juice
- 2 tsp finely grated lime zest
- 1/2 cup unsweetened coconut flakes, for sprinkling
- Line 12 cups of a standard muffin pan with paper liners.
