Serves 2


  • 4 basil leaves, finely chopped (optional)
  • 3-4 TBSP mayonnaise
  • 4 large Bibb lettuce leaves
  • 2 medium Roma tomatoes, thinly sliced
  • 3 large hard boiled eggs, peeled and thinly sliced
  • Sea salt and black pepper, to taste
  • 4 slices cooked bacon, broken in half


  1. Mix the basil (if using) into the mayonnaise. Spread evenly among the lettuce leaves.
  2. Shingle the tomato and egg slices on top of the lettuce leaves.
  3. Sprinkle with salt
