Serves 2


  • 1 large fennel bulb, sliced lengthwise into
  • 1/4-inch pieces, fronds discarded
  • 2 large pears, cored and sliced into 1/4-inch pieces
  • 2 TBSP extra virgin olive oil
  • 1/4 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/4 tsp ground pepper


  1. Preheat oven to 350 degrees F.
  2. Place fennel and pears on a baking sheet; drizzle with olive oil. Sprinkle with cinnamon, sea salt and pepper. Bake for 20-25 minutes or until soft.
  3. Remove from oven; serve warm or chilled atop salads
