A hot cereal breakfast can provide a gentle start to the day. This nut-based take on oatmeal is both satisfying and comforting, while the coconut milk and blueberries allow for the breakfast to be a bit sweet. For added color and flavor, top with additional fresh or dried fruit, like raspberries or dried cranberries.


  • 1/4 cup almonds
  • 1/4 cup pecans
  • 1/4 cup shredded coconut
  • 1 large banana
  • 3/4 cup coconut milk
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup fresh blueberries


  1. Place the almonds, pecans and shredded coconut in a high-powdered blender. Blend until finely chopped, or until the batch’s texture resembles that of almond meal. Remove from the blender, place in a small bowl and set aside.
  2. Place the banana, coconut milk, cinnamon and nutmeg in the blender. Blend until well combined.
  3. Remove the blender lid and add the dry mix of almonds, pecans and shredded coconut. Blend until well combined. Remove the blender lid once more and add the blueberries, blending for 3–5 seconds or until the blueberries are lightly chopped.
  4. Transfer to a saucepan and warm for 3–5 minutes over low-medium heat.

Place in a bowl, top with fresh or dried fruit and enjoy! Or store in the refrigerator to enjoy the next day!
