  • 1 tsp avocado oil, plus more for greasing
  • 1 Cup diced onion
  • 4 Cups shredded chicken
  • 1/2 cup paleo BBQ sauce (True Made Foods is a great option)
  • 1/4 cup mayo
  • 8 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • salt and pepper, to taste
  • optional toppings: green onion, chopped parsley, sliced avocado


  1. Preheat oven to 350 degrees Fahrenheit. Grease a 9×11 inch pan and set aside.
  2. In a medium size saute pan over medium heat, add avocado oil and let it get hot, about 30 seconds. Add onion and saute for 3-5 minutes until softened. Add to a medium size mixing bowl along with shredded chicken, BBQ sauce, and mayo.
  3. Whisk together eggs, garlic powder, onion powder, paprika, and salt and pepper in a medium bowl. Add to chicken mixture and mix well to combine. Evenly distribute the mixture into the baking dish and bake for 35-40 minutes until golden brown and firm to the touch. Top with optional toppings and enjoy!
