Makes about 6

Ingredients

  • 2 medium bananas, peeled and cut into 1-inch slices
  • 1 TBSP coconut sugar
  • 1 (15-oz) can full-fat coconut milk
  • 2-3 TBSP honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Directions

  1. Preheat the oven to 400ºF.
  2. Line a baking sheet with parchment paper.
  3. Toss the banana slices with the coconut sugar.
  4. Spread on baking sheet in an even layer.
  5. Roast for 20-25 minutes, until caramelized.
  6. Cool completely.
