Makes 2-3 large waffles (may yield more depending on waffle maker)


  • 1-1/4 cups Otto’s Naturals Cassava Flour
  • 1/4 cup arrowroot starch
  • 1 tsp baking soda
  • 1 (13.5-ounce) can coconut milk (full fat)
  • 1/4 cup coconut oil, melted
  • 1 TBSP apple cider vinegar
  • 1 TBSP maple syrup (optional)
  • 1 tsp vanilla extract

Optional toppings:

  • Sliced bananas
  • Warm berries
  • Jam
  • Almond butter
  • Fried eggs and avocado


  1. Combine the cassava flour, arrowroot starch, and baking soda in a large bowl. Whisk to combine. In a separate bowl whisk together the coconut milk, coconut oil, vinegar, maple syrup, and vanilla. Pour into the dry ingredients and mix thoroughly to combine. The batter should be thick but pourable. If it’s too thick, add a small amount of water.
  2. Heat a waffle iron until very hot. Add the batter and cook according to the manufacturer’s instructions. Because of the density of cassava flour, these waffles should likely be cooked 30-60 seconds longer than what a typical waffle makers suggest.
  3. Top as desired and serve.
