  • 2 TBSP avocado oil
  • 4 bone-in beef short ribs (about 4 lb)
  • Fine sea salt and freshly ground black pepper, to taste
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 6 cloves garlic, minced
  • 2 canned chipotle peppers, seeded and chopped
  • 1 TBSP adobo sauce from the can of chipotle peppers
  • 2 TBSP cassava flour
  • 1-1/2 cups dry red wine
  • 1-1/2 cups beef bone broth
  • 2 tsp raw
