- 4 bone-in beef short ribs (about 4 lb)
- Fine sea salt and freshly ground black pepper, to taste

- 6 cloves garlic, minced
- 2 canned chipotle peppers, seeded and chopped
- 1 TBSP adobo sauce from the can of chipotle peppers
- 2 TBSP cassava flour
- 1-1/2 cups dry red wine
- 1-1/2 cups beef bone broth
- 2 tsp raw
