Ingredients

For the carrots:

  • 1 pound carrots, peeled
  • 2 TBSP extra-virgin olive oil
  • 1 tsp honey
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

For the burgers:

  • 1 pound ground turkey
  • 1/3 cup finely chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 1 tsp finely grated lime zest (from about 1 lime)
  • 1 TBSP fresh lime juice (from about 1 lime)
  • 1 TBSP coconut oil

Optional, for serving: romaine lettuce leaves, sliced tomatoes, and sliced
