PREP TIME:​ 5 minutes

  • 4 pieces bacon
  • 2 Cups diced onion
  • 4 medium bell peppers, diced
  • 4 Cups diced ham
  • 1 tsp garlic powder
  • salt and pepper, to taste
  • 12 large eggs
  • For topping: avocado, hot sauce


  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, whisk eggs with salt and pepper and set aside.
  3. Place a large cast iron skillet, or oven safe dish, over medium heat and let it get hot, about 2 minutes. Once pan is hot, add bacon and cook for 10 minutes, flipping once halfway through. Remove from pan. Leaving grease behind, add onion and saute for 3-4 minutes. Add peppers, ham, and garlic powder and saute for another 5 minutes until softened.
  4. Pour egg mixture in cast iron, making sure it distributes evenly. Let cook for 2-3 minutes until bottom sets. Place in oven and cook for 18-20 minutes until eggs are firm. Cut into 8 pieces and serve with avocado and hot sauce if desired. Enjoy!
