Ingredients
- 2 Tbsp extra-virgin olive oil
- 3 scallions, thinly sliced
- 10 cherry tomatoes, halved
- 1 cup vegetable broth
- 2 Tbsp freshly squeezed lime juice
- 2 large carrots, julienne
- 1/4 cup finely chopped fresh cilantro
- 1/2 lb lump crab meat
- 1/4 tsp garlic salt
- 1 tsp crushed red pepper
- 1/4 tsp sea salt
- 1/4 tsp freshly ground pepper 2 tsp slivered almonds
- 1/4 tsp fresh lemon zest
Directions
- Heat oil in a large saucepan over medium heat, add tomatoes; cook for 2 minutes. Add remaining ingredients; cook for 15 minutes. Remove from heat.
- Transfer to serving bowls.
- Serve warm.
