Ingredients

  • 2 Tbsp extra-virgin olive oil
  • 3 scallions, thinly sliced
  • 10 cherry tomatoes, halved
  • 1 cup vegetable broth
  • 2 Tbsp freshly squeezed lime juice
  • 2 large carrots, julienne
  • 1/4 cup finely chopped fresh cilantro
  • 1/2 lb lump crab meat
  • 1/4 tsp garlic salt
  • 1 tsp crushed red pepper
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground pepper 2 tsp slivered almonds
  • 1/4 tsp fresh lemon zest

Directions

  1. Heat oil in a large saucepan over medium heat, add tomatoes; cook for 2 minutes. Add remaining ingredients; cook for 15 minutes. Remove from heat.
  2. Transfer to serving bowls.
  3. Serve warm.
