This is a really simple salad made with fresh ingredients. I used galia melon (which is a cross between a honeydew and a cantaloupe melon) for this Paleo salad recipe, but you can use honeydew or cantaloupe melon instead.
The key ingredient in this dish is really the fresh ginger – it adds a zing to the flavor. Use extra virgin olive oil and sea salt to enhance the taste as well.
Place the salad leaves in a bowl and add in the extra virgin olive oil.
Sprinkle in the sea salt.
Grate or dice some fresh ginger and add it into the salad.
Squeeze in some fresh lemon juice to the melon salad.
Dice the melon into small chunks and add to the bowl. I like to slice the melon and then cut it into small pieces.
Dice some cucumber into small pieces and add into the bowl. The cucumber chunks should be cut to a similar size as the melon chunks. The cucumber adds extra crunch and makes the salad less sweet and more refreshing.
Toss the salad really well – I like to just use my hands to get the ginger, sea salt, fresh lemon juice, and extra virgin olive oil really mixed in.
