  • 6 cups thinly sliced romaine lettuce
  • 1/2 medium red onion, thinly sliced
  • 2 medium Roma tomatoes, seeded and diced
  • 1 medium Anaheim pepper, seeded and thinly sliced (or use 1/2 medium bell pepper for a less spicy option)
  • 1/2 cup olives, pitted and thinly sliced
  • 4 ounces deli turkey or chicken, chopped
  • 4 ounces salami, chopped
  • 1/3 cup extra-virgin olive oil
  • 2 TBSP apple cider vinegar
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • 1 tsp dried Italian herbs
