Makes 18-20


  • 2 cups raw cashews
  • 3/4 cup unsweetened shredded coconut
  • 2 TBSP coconut flour
  • Pinch of sea salt
  • 1/3 cup (packed) pitted Medjool dates (about 5 large dates)
  • 2 TBSP unsweetened applesauce
  • 2 TBSP honey
  • 1 TBSP (packed) finely grated lemon zest
  • 1 TBSP poppy seeds


  1. In a food processor fitted with the steel blade, combine the cashews and shredded coconut. Process until finely ground, about 30 seconds.
