Ingredients
- 1/2 cup pitted Medjool dates
- 2 cups strong, hot coffee
- 1 TBSP raw honey (optional)
- 1 tsp pure vanilla extract
- 2 medium-size, ripe avocados, pitted
- 1/4 cup cocoa powder
- 1 cup fresh raspberries
- Mint leaves, for garnish
Directions
- Place the dates in a bowl. Pour the hotcoffee over the top. Soak the dates for 10 minutes. Drain, reserving the coffee.
- Place the dates in a food processor fitted with the steel blade. Add 1/2 cup of the reserved coffee, honey, and vanilla. Process until smooth.
- Add the avocado flesh and cocoa powder. Process until creamy and smooth, stopping to scrape down the sides of the bowl as needed.
- Serve pudding in small bowls topped with raspberries and mint leaves.
