Serves 4


  • 1/2 cup pitted Medjool dates
  • 2 cups strong, hot coffee
  • 1 TBSP raw honey (optional)
  • 1 tsp pure vanilla extract
  • 2 medium-size, ripe avocados, pitted
  • 1/4 cup cocoa powder
  • 1 cup fresh raspberries
  • Mint leaves, for garnish


  1. Place the dates in a bowl. Pour the hotcoffee over the top. Soak the dates for 10 minutes. Drain, reserving the coffee.
  2. Place the dates in a food processor fitted with the steel blade. Add 1/2 cup of the reserved coffee, honey, and vanilla. Process until smooth.
  3. Add the avocado flesh and cocoa powder. Process until creamy and smooth, stopping to scrape down the sides of the bowl as needed.
  4. Serve pudding in small bowls topped with raspberries and mint leaves.
