- Brew the black tea and add in the coconut sugar while the tea is hot.
- When the tea is cool, add in the coconut milk (strain if there are coconut bits in the coconut milk).
- Add in the ice and serve.
I was planning to make a Paleo Thai iced tea, but I realized I was out of some spices, so instead I ended up making this coconut iced tea latte (quite delicious!).
Plus, this recipe is AIP-compliant. (Read more about AIP here.)
STEP 1: Make iced tea with black tea (use black tea leaves or tea bags). Use hot water to brew the tea and then let it cool. Brew for longer if you prefer a stronger tea (approx. 5 minutes). Add in coconut sugar to taste while the tea is hot so it dissolves easily. (TIP: make a large jug of black tea – then do steps 2 and 3 when you’re ready to drink each glass.)
STEP 2: Once cooled, add in the coconut milk (I used it from a can of coconut milk) and mix in. (Strain if there are coconut bits in the coconut milk.)
STEP 3: Add in ice and enjoy.
