Anything pizza-inspired is always a win and keeps us from being tempted by the real deal. Just mix your favorite pizza toppings into a simple breakfast casserole and serve with scratch-made pizza sauce for a delicious brunch that everyone will enjoy!

Serves 9

For the breakfast bake

  • 12 large eggs
  • 1 green bell pepper, sliced
  • 1/2 cup sliced mushrooms
  • 1/2 cup all-natural uncured pepperoni, chopped
  • 1/4 cup white onion, sliced then roughly chopped
  • 1/4 cup sliced olives
  • 1/4 cup coconut milk
  • 2 tsp minced garlic
  • 1/2 tsp each: salt, pepper, dried oregano
  • pinch of red pepper flakes

For the sauce

  • 1 (15 oz) can tomato sauce
  • 5 fresh basil leaves, chopped (or 1/2 tsp dried basil)
  • 1 tsp minced garlic
  • 1/2 tsp dried oregano
  • salt & pepper, to taste
  • pinch of red pepper flakes


  1. Preheat the oven to 375ºF. Grease a large baking dish (about 9 x 12”) and set aside.
  2. In a large skillet, over medium heat, sauté the bell pepper, mushrooms, onion, and minced garlic for 5 minutes to soften. Stir in the olives and chopped pepperoni. Scoop the mixture into the greased baking dish, spreading evenly along the bottom.
  3. In a large bowl, whisk the eggs, milk, and spices until combined. Pour the egg mixture over the meat and vegetables. Transfer the baking dish to the preheated oven, and bake for 25 to 30 minutes or until the eggs are set.
  4. Meanwhile, make pizza sauce by combining the tomato sauce, basil, garlic, oregano, and red pepper flakes in a small bowl. Season with salt & pepper to taste.
  5. Slice the breakfast bake into 8 pieces & serve topped with sauce.
