- 1 (4- to 5-lb) whole chicken, giblets removed, excess fat trimmed
- Sea salt, to taste
- 10 sprigs fresh thyme, divided use
- 5 sprigs fresh rosemary, divided us
- 1 small lemon, quartered
- 5 cloves garlic, smashed and skins removed
- 3 TBSP avocado oil, divided
- freshly ground black pepper, to taste
- 3 large onions, cut into 1/2-inch-thick slices
- 2 bulbs fennel, tops removed, cored, cut into wedge
