  • 1 large rotisserie chicken mayonnaise
  • 1/2 cup mayonnaise
  • 1/2 tsp lime zest
  • 2 TBSP lime juice
  • 1/2 tsp  ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Sea salt and black pepper, to taste
  • 1 tsp  hot sauce
  • 1 cup diced tomatoes
  • 3 TBSP chopped fresh cilantro
  • 4  green onions, chopped
  • Bibb lettuce leaves, for serving


  1. Remove all the chicken meat from the bones. Chop meat into bite-sized pieces and place in a large bowl. Refrigerate the chicken for a few minutes to cool completely.
  2. In a medium bowl, whisk together the mayonnaise, lime zest, lime juice, cumin, garlic powder, onion powder, a pinch each of salt and pepper, and the hot sauce until smooth. Stir in the tomatoes, cilantro, and green onions. Pour over the chicken and toss to coat.
  3. To serve, spoon chicken salad into lettuce leaves and enjoy!
