  • 3 TBSP coconut oil, divided use
  • 1/2 large yellow onion, diced
  • 1 medium-size sweet apple, cored and diced
  • 1 clove garlic, minced
  • 1 lb ground chicken
  • 1 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 tsp fresh sage, minced
  • 1 tsp dried thyme

  1. Melt the 1 tablespoon of the oil in a large skillet set over medium-high heat. Add the onion and apple. Cook for 2-3 minutes, stirring occasionally.
  2. Add the garlic, cook for 1 more minute, then turn off the heat and allow to cool for a few minutes.
  3. Add the onion mixture to a large bowl, along with the ground chicken, salt, pepper, sage, and thyme. Mix until all ingredients are well combined. Form into patties about 3 inches in diameter.
  4. Melt the remaining 2 tablespoons of oil in a large skillet set over medium heat. Add the patties to the skillet, leaving some space between each. Cook for 3-4 minutes or until browned nicely. Flip the patties over and cook an additional 3-4 minutes or until cooked through.
