- 1 cup diced tomatoes
- 1 yellow pepper, diced
- 1 tablespoon cilantro, finely chopped
- 1 tablespoon olive oil
- salt to taste
- Mix the tomatoes, pepper, cilantro, olive oil and salt together.
These days, I feel like there’s barely any time to cook, so my only option is to cook without cooking….i.e. salsa!
I started with some tomatoes and a yellow pepper.
I diced the tomatoes and pepper.
Then I chopped up some cilantro.
And mixed it all with some olive oil and salt. I also made some chia crackers to eat with the salsa, but the salsa tasted pretty good by itself too. I’ll post the chia cracker recipe soon – too tired to do it tonight.
