Ingredients
- 1 TBSP avocado oil
- 1/2 Cup chopped onion
- 2 cloves garlic, minced
- 2 Cups packed spinach, chopped
- 1-1/2 cups artichokes, chopped
- 1 Lb. ground turkey
- 1 large egg
- 2 TBSP coconut flour
- 1/2 TBSP garlic powder
- 1/2 tsp red pepper flakes
- salt and pepper, to taste
- for serving: lettuce cups, sliced tomato, avocado, sliced red onion
Directions
- In a medium sized skillet, add avocado oil and let it get hot. Add onion and saute for 5 minutes until soft. Add spinach and artichokes and saute for another 2-3 minutes until spinach is wilted. Remove from heat.
- In a medium bowl, add turkey, egg, coconut flour, spices, salt and pepper, and the spinach mixture. Mix well to combine. If mixture is too wet, add more coconut flour. Form into 4 equal sized patties. Place in the fridge to set for 5-10 minutes.
- Light grill and let it come up to temperature. Place burgers on grill over direct heat and grill for 3-4 minutes per side, flipping once.
Serve burgers in lettuce cups with sliced tomato, avocado, and red onion.
