- 1 ripe avocado
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoon balsamic vinegar
- salt to taste
- Halve a ripe avocado.
- Remove the pit, and using a small knife carefully score each half into cubes. Then use a spoon to scoop out the avocado – it’ll be in nice cubes now.
- Toss with extra virgin olive oil, balsamic vinegar, and salt.
