- 6 slices bacon
- 1/2 medium yellow onion, diced
- 3 garlic cloves, minced or finely grated
- 1 TBSP finely chopped fresh thyme
- 1/2 tsp curry powder
- 1/4 tsp smoked paprika
- 1/4 tsp dried dill
- 3 medium sweet potatoes, peeled and cut into 1/2-inch dice
- 4 cups chicken broth
- 4 cups chopped kale
- 1 cup canned coconut milk (full fat)
- Sea salt and black pepper, to taste
- Chopped parsley, for garnish
- Heat a large pot or Dutch oven over medium
