  • 3 medium sweet potatoes, cut into 1/4–1/2-inch thick rounds
  • 2 TBSP extra virgin olive oil, divided use
  • 1/4 tsp sea salt, plus more to taste
  • 1/4 tsp black pepper, plus more to taste
  • 1 lb ground beef, preferably grass fed
  • 1/2 cup finely chopped yellow onion
  • 1 medium celery stalk, finely chopped
  • 1 garlic clove, minced or finely grated
  • 1 TBSP tomato paste
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 TBSP honey
  • 2 tsp apple cider vinegar
