Ingredients

For the salsa:

  • 1 medium ripe mango, peeled, seeded, and diced
  • 1 medium cucumber, peeled, seeded, and diced
  • 1/4 cup diced red onion
  • 1/4 cup finely chopped fresh parsley
  • 2 TBSP finely chopped fresh mint
  • 1 medium serrano pepper, seeded and diced (optional, omit for less heat)
  • 1 medium lime, zested and juiced
  • 1 tsp extra-virgin olive oil
  • 1 tsp honey
  • 1/4 tsp sea salt

For the salad:

  • 1-1/2 pounds ground turkey
  • 1/4 cup finely chopped fresh parsley
  • 2 garlic
