Ingredients

  • 30 large cremini mushrooms, stemmed and wiped clean with a damp paper towel
  • 1 TBSP extra virgin olive oil
  • 1 lb ground turkey
  • 1 cup shredded carrots
  • 3/4 cup finely chopped onion
  • 3 garlic cloves, finely chopped
  • 1-1/2 tsp fennel seeds
  • 3/4 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3/4 cup blanched almond flour
  • 3 large eggs, lightly beaten
